Aunt Dixie's Rhubarb Custard Pie

Ingredients

  • Pastry for a double crust pie
  • 3 beaten eggs
  • 3 tbsp flour
  • 1 3/4 cups sugar
  • 4 cups diced rhubarb

Instructions

  1. Mix eggs, flour, sugar, and rhubarb together.

  2. Place in prepared pie crust. Cover with top crust and crimp edges.

  3. Bake at 400 degrees for 45 minutes.
