Chicken Pot Pie: The Ultimate Comfort Food

I have to admit that autumn is my favorite time of year. I love to watch the trees as their leaves change into vibrant shades of golden yellow, orange, and scarlet. As the leaves fall and the weather grows colder, it’s the perfect time for one of my favorite comfort foods: homemade chicken pot pie.

You may be used to the little chicken pot pies sold in the freezer section of your local grocery store. This recipe is nothing like those. There’s a lot less sodium and much more flavor!

So, how do I make this wonderful one-dish meal? It’s actually easier than you think.

Chicken Pot Pie

This yummy one-dish meal is a family favorite. It's easy to make ahead and freeze for a later date.

Ingredients

  • 2 cups cooked, cubed chicken
  • 1 package (12-16 oz.) frozen mixed vegetables
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 tsp poultry seasoning
  • 2 rolled pie crusts

Instructions

  1. Cook chicken and cut into bite-size pieces. I usually use my Instant Pot to cook the chicken. 

  2. Mix chicken, frozen vegetables, cream of chicken soup, and sour cream together in a large bowl.

  3. Add poultry seasoning and stir well.

  4. Place one of the pie crusts in an 8 3/4 or 9 inch pie pan. Use a foil pan if you plan to freeze your pot pie for a later date. 

  5. Add the chicken mixture. to the pie pan on top of the bottom crust.

  6. Cover with the top crust and crimp the edges to seal. Make cuts in the crust for steam to escape.

  7. Freeze for later or bake at 350 degrees for approximately 1 hour and 10 minutes or until golden brown.

If you need to save time, you can easily cook your pie on a higher temperature setting (up to 425 degrees). Just watch the edges and cover them with foil if they start to get too brown.

I normally use prepared pie crusts to save time. This is a great dish to make ahead. I never make just one–usually it’s at least two at a time. The last time, I made four! One to eat, one to send to a dear friend who’s recovering from surgery, and two to put in the freezer for a day that I don’t really feel like cooking. If you do freeze your pot pie, plan on  approximately an hour and 45 minutes to  two hours baking time at 350 degrees.

The calorie count is based on using prepared pie crusts, full-fat sour cream, Campbell’s Healthy Request soup, and chicken breast. We cut our chicken pot pie into six slices, but you could divide it into eight servings.

  6. GOD do I miss pot pie. Bein on the keto diet, I can’t do the crust, and the cream of chicken soup has a lot of carbs in it. I’m currently trying to find a keto friendly chicken pot pie recipe because it really is comfort food. Especially when the weather is really icy. Nothing like a nice chicken pot pie on a snowy day, just curl up on the couch in a blanket with your pot pie and watch a good movie. Thing of beauty right there.

  12. I am not a fan of chicken pot pie but my husband and daughter love it. Maybe I’ll be nice and make them this one soon. Lol. It really is a great comfort food especially in colder months.
