Easy Cucumber Salad

As you may know, I planted my first real vegetable garden this year. It’s not very big, but I’ve enjoyed watching the plants grow. As a part of that garden, I planted four cucumber plants, training them to climb up wrought iron fleur de lis trellises. Now some of my cucumbers are ready to pick.  I haven’t had enough ready at once to make Dad’s famous refrigerator pickles yet–hopefully soon! We’ve eaten a few here and there, just slicing and eating them with a little salt or seasoned salt. Dennis suggested that I make an easy cucumber salad using sour cream and dill weed. This recipe is so simple and refreshing that I decided to share it with you.

Making this easy cucumber salad

Ingredients for our easy cucumber salad

To make this easy salad, you’ll need two cucumbers, 1/2 teaspoon salt, 1 table spoon sugar, 1/4 teaspoon dill weed, a few shakes of pepper, 1/2 cup sour cream, and 1 tablespoon vinegar. It doesn’t really matter what kind of vinegar you use. This time I used red wine vinegar, but I’ve also used regular white vinegar and apple cider vinegar.  You can make it without the dill weed, but it change the flavor slightly.

Since there are only two of us at home these days, I cut the recipe in half and only used one cucumber.

Preparing the cucumbers

First, you will need to peel and slice the cucumbers. I use a mandoline slicer, but you can easily use a knife. Your slices should be 1/8 inch thick (3 mm)–a number two on my old Pampered Chef slicer.  Once you’ve sliced your cucumbers, sprinkle the salt over them and stir. Set them aside for 20 minutes and then drain the liquid off.

The dressing

Combine the remaining ingredients. Add the dry ingredients and then mix in the vinegar and sour cream.  Pour the dressing over the cucumbers and toss to coat. Cover your salad and chill it for at least 20 minutes before serving.

Ingredients

  • 2 medium cucumbers peeled and sliced
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/4 tsp dill weed
  • dash pepper
  • 1 tbsp vinegar
  • 1/2 cup sour cream

Instructions

  1. Peel and slice cucumbers to approximately 1/8 inch thickness.

  2. Sprinkle salt over cucumbers, let set for 20 minutes and then drain.

  3. Mix remaining ingredients, pour over cucumbers, and toss

  4. Cover and chill before serving.

 

This easy cucumber salad combines cucumbers with sour cream, vinegar, and spices.
Remember, I cut the recipe in half–this is what one cucumber looks like!

This recipe is simple, yet refreshing. It’s the perfect accompaniment to any summer dinner. We’re having it tonight with bacon lettuce tomato sandwiches and fresh corn on the cob. I hope you enjoy it!

  1. This sounds like a perfect refreshing side dish for the hot summer months! I will be making this the next time we grill burgers outside. Seems like a perfect addition to that! I have been using dill a lot lately, when I make ranch or tartar sauce, because it adds a really nice pop of freshness. I would guess it does the same in this dish, and a definite required ingredient.
