When my brothers and I were young, our father would often make us breakfast before school. He worked shifts at a local steel mill, so if he was home and awake, we would have our choice of French toast, eggs, or pancakes. I can remember going to school and boasting that Dad had made us each 20 pancakes. Okay, some of them were dime-sized, but that really doesn’t matter when you’re nine.
This weekend, two of the grandbabies spent the night. We don’t usually keep cereal in the house because we don’t use it before it gets stale. We didn’t have any bread and only had a little milk. So, for breakfast, homemade pancakes to the rescue!
The Recipe
Pancakes are easy to make. You don’t need any special ingredients–just butter, eggs, milk, flour, baking soda, sugar, and salt. For years, I purchased Bisquick or Jiffy mix, but it’s really not necessary. Now that the kids have moved out, those mixes don’t get used up before they expire, so we just don’t purchase them anymore. Making your own pancakes from scratch is actually cheaper, and really, it’s super easy!
Ingredients
You probably already have what you need in your refrigerator and pantry. To make these pancakes, you’ll need one egg, a cup and a half of milk, and two tablespoons of butter along with two cups of flour, two tablespoons of sugar, one tablespoon of baking soda, and a teaspoon of salt. I added chocolate chips for the kids, but they aren’t necessary. Occasionally, I’ll add a chopped up banana and some nuts if I want something special or blueberries. It’s up to you.
Directions for these perfect pancakes
As I said, it’s a simple recipe. Melt your butter and after it cools, mix your wet ingredients together. Combine the dry ingredients and then add the wet ingredients to them. Whisk well. Drop onto a hot griddle and cook until golden brown. Serve and enjoy!
Perfect Pancakes
An easy recipe for perfect homemade pancakes using ingredients you already have at home.
Ingredients
- 2 tbsp butter
- 1 1/2 cups milk
- 1 egg beaten
- 2 cups flour
- 1 tbsp baking soda
- 2 tbsp sugar
- 1/2 tsp salt
Instructions

Melt butter and set aside.

Combine dry ingredients.

Whisk milk, egg, and butter together. Add mixture to dry ingredients. Mix well.

Drop batter in 1/4 cup increments onto hot griddle (250 degrees). Flip after bubbles pop. Remove from heat when pancakes are golden brown.

Optional: Add chocolate chips as a garnish while batter is moist, before flipping the pancakes.

Serve and enjoy!
Conclusion
These pancakes will be a hit, no matter who you serve them to. The recipe made 14 pancakes (1/4 batter each). You can always serve them with butter and syrup, but with little ones, that’s a little messy. As you can see, Josh and Ady loved them even without syrup. Try them out and let me know what you think!
Note: For years, I cooked my pancakes in a skillet on top of the stove. However, about fifteen years ago, I upgraded to an electric griddle. It’s useful for so many things, from pancakes to bacon to grilled cheese sandwiches. This is a newer version of the one I have. Yum! My husband’s favorite Sunday breakfast is chocolate chip pancakes and we make them pretty much the same way. The best is when the pancakes are so good you don’t even need syrup. Okay now I’m hungry lol!

MY family loves pancakes and we often make them from scratch. So much better than store bought pre-made mix. We also have a griddle that we use all the time and it has been the best investment to make the perfect pancakes. Some organic eggs help as well!
